Five primary dice determine your protein, your cooking method, your grains or carbs, herbs, and bonus ingredients. Don’t worry vegetarians – each protein option includes a meat and also a non-meat choice! Simply roll the dice and put together an entire meal one roll at a time. Protein choices could be beef (or tempeh), chicken (or tofu), turkey (or seitan), fish (or cheese), pork (or eggs), or lamb (or beans). Once your protein is chosen, you can roll to grill, roast, sauté, pan fry, braise, or broil it. Add rice, quinoa, pasta, polenta, potato, or millet to round your dish out. Then, season your meal with rosemary, basil, oregano, cilantro, thyme, or dill. Finally, finish it off with mushrooms, bacon, nuts, onions, lemon, or garlic!
Once you’ve put together your main dish plan, finish it off with a vegetable. Four dice for veggies are broken out into what’s in season for spring, summer, fall, and winter. Spring choices include dandelion greens, peas, asparagus, artichokes, spinach, or radishes. Summer choices include bell pepper, zucchini, eggplant, tomatoes, corn, or green beans. Fall favorites are mustard greens, brussels sprouts, squash, chard, broccoli, or arugula. Winter choices are carrots, parsnips, cabbage, fennel, endives, or kale.
